I'm a novice in the sea. Is it possible to buy paternoster rigs for use from, say, a pier, to save me getting it wrong and losing a fish?

I'm a novice like yourself but have found making the sort of rig you're looking for very easy

You can buy all the components needed or readymade rigs from various outlets, I use Veals, they offer an excellent service with a vast stock of goodies.

This one of their readymade rigs...

You can if you want to keep it dead simple just attach a weight clip to the bottom of the line and then tie 1,2 or 3 loops into the line above that using figure of 8 knots. Cut one of the line loop segments near the the main line and then tie hooks to them at whatever length you want. I use this often enough when wanting to do it quickly.
